Some words about SUMMER'S BLOG

I love peanut butter, avocado and oatmeal. Not together of course, but nearly any recipe that calls for these ingredients I'll probably enjoy. I have the misfortune of living with some food sensitivities but the extreme fortune of knowing what those sensitivities are - gluten (only mild, thank goodness), nightshades, lactose, and refined sugar. I'm not a formally trained chef, but I love cooking (and eating!) delicious, guilt-free food. I'm a fitness model, certified nutrition coach, trainer and an IFBB pro bikini athlete... and I eat 6 times a day. When I'm not in the kitchen preparing something extraordinary, I'm - in the gym, rushing off to an audition, at a photo shoot, studying nutrition, or planning a vacation. Hope you enjoy my site! When trying to choose a picture for this section, my first inclination was to find one in the most exotic locations, doing something brilliantly different than I do when I’m back home. I thought that would be the best depiction of the fun, fit, travel girl.  It’s true, I do love to travel, and adding colorful stamps to my passport is a past time that I dream about daily, but it’s not what I do all year, unfortunately! If I’m lucky, a producer from the Travel Channel or the Food Network will stumble upon this blog and fall in love with my adventurous character, charm and good looks, will offer me the hosting gig of a lifetime.

So what do I do when I’m not traveling, you might ask next? I am an IFBB (International Federation of Bodybuilding) bikini pro athlete, and with that title I have the fortune of spending many dedicated hours in the gym, hiking up mountains, running up stairs, getting acquainted with supermarket cashiers, cooking up cool and innovative bikini-friendly recipes, and substituting EVERYTHING at restaurants.

I’ve become a clean eating junkie, a gluten-free sugar-free obsessed foodie (with the occasional exceptions), and a veritable whiz at cooking up my idea of gourmet in a matter of minutes (when you have to eat every 2.5 to 3.5 hours, you not only need innovation to keep things exciting but quick cooking meals that can be easily eaten on the go!).

Now there is one thing that I’ll let you know, that I haven’t mentioned to many people.  I have struggled with some serious digestive system issues in the past.  For years, I couldn’t understand why I was always bloated after a meal, felt acidic after a salad or became lethargic after my morning or mid-day brew.  I became confused as to why I was suffering when I ate a healthy diet, exercised regularly, and didn’t seem to have a history of illness.

It became a shocking reality that I was sensitive and even mildly allergic to some of my favorite foods and that, to live a normal life (one without tummy pain, acid reflux, developing arthritis in my thumbs, itchy rashes on my elbows, and constipation problems…yikes!), I’d have to give up or GREATLY reduce some of my culinary starting lineup.  So enter the me that you will all get to know. The (mainly) gluten-free, sugar-free, nightshade-free, lactose-free, fun, fit, travel girl!
