Some words about SUMMER'S BLOG

I love peanut butter, avocado and oatmeal. Not together of course, but nearly any recipe that calls for these ingredients I'll probably enjoy. I have the misfortune of living with some food sensitivities but the extreme fortune of knowing what those sensitivities are - gluten (only mild, thank goodness), nightshades, lactose, and refined sugar. I'm not a formally trained chef, but I love cooking (and eating!) delicious, guilt-free food. I'm a fitness model, certified nutrition coach, trainer and an IFBB pro bikini athlete... and I eat 6 times a day. When I'm not in the kitchen preparing something extraordinary, I'm - in the gym, rushing off to an audition, at a photo shoot, studying nutrition, or planning a vacation. Hope you enjoy my site! Fun Fit Foodie – Refined sugar-free, gluten-free, and all organic

Fun Fit Foodie Pressed Juices and Gluten-free, Refined Sugar-free baked goodsMy fascination with baking started many years ago, when I was just a wee lass.  Truth be told, it’s probably less the physical labor, and more the end product that I love so much. Back then it was coffee cake, with all the “goodness” of all-purpose flour, table sugar, and full fat butter.  Boy, did I think I was queen of the kitchen with all those cinnamon swirls!

Like all things, my recipes have evolved and so has my palate; which, since we’re speaking about it, is as picky as a royals’.  I can taste the cheapness of such low-quality, refined food products, and even when my taste buds fool me, my belly lets me know!  So today, I much prefer all organic, finely milled whole grain flours, calorie free herbal sweeteners or all natural sweeteners, and extra virgin oils, hormone-free butters (when I’m dining out at a high quality organic restaurant or steakhouse) or vegan spreads for that finishing touch of velvety texture.

I’ve stepped my game up, and am now formulating such magic that includes: vegan, sugar-free, gluten-free cheesecakes, dark chocolate peanut butter cookie sandwiches, sweet potato pies, no-bake flour-less coconut-chocolate fudge cakes, and stevia sweetened apple pies with seed crusts.

I know what some of you wary readers are thinking, but don’t fret… they not only taste insanely good (I’d say better then the classics!), but they are all-natural, and chock full of superfoods, vitamins, minerals, antioxidants, and high quality proteins! Yes, you are actually indulging yourself healthy, and boosting your immune system! You know they say your immune system is in your gut, so always enjoy foods that are healing, and powerfully full of nutrients.

I’ve teamed up with a friend that I met through Landmark Education (the seminar series on leadership and empowerment), to form a little business I’m calling the Fun Fit Foodie.  He was in the process of starting an all vegan food and pressed juice truck when we got the idea of delivering goodness to busy working professionals each day.  Food trucks are great and dandy, but because of regulations on restaurant proximity, they are a little limited with their reach.Fun Fit Foodie Pressed Juices

For now, our operation is out of a home kitchen, but our delivery service is far reaching, and aims to be all-encompassing.  He manages the pressed juice, wellness shots, and salad component of our menu, and I handle all the high protein smoothies and baked goods.  We offer boosts of spirulina and Sun Warrior vegan sprouted rice protein to any of our juices, so each drink can be treated as a meal replacement.  Unlike many of our competitors, we do not use high calorie fillers like agave, and do not produce our goods in homes that contain dairy, so there are no worries about mixups between almond and moo milk (a common mishap when I used to buy java at an ever-popular coffee chain).

As of this week, we just found out that the Fun Fit Foodie baked goods will be carried in a few organic juice bars in town (location to be disclosed shortly)! We are very excited about this, but our menu will still be available for delivery.
